Grilled Butternut Squash and Apples

FullSizeRenderTonight we made a grilled squash and apple packet.  Earlier in the day, Becky peeled and cut 2 small butternut squash from the garden.  The pieces were put into a zip-topped bag and placed in the refrigerator.  They will keep for a few days that way and will be very convenient for meals.

2 cups butternuts squash, cut into chunks

1 apple, cut into chunks

1-2 Tablespoons brown sugar

1/2 teaspoon cinnamon

1 Tablespoon butter

Place a double layer of foil on the counter, about 15-18 inches in length.  Place squash and apples onto the foil.  Sprinkle brown sugar and cinnamon on top.  Dot the top with  butter.  Securely fold the foil into a packet.  Place on a heated grill. (around 350 degrees).  Grill the packet for 20-30 minutes, checking at the 20 minute mark, and grill until the squash is softened.  Makes 4 servings.

We served the squash and apple grill packet with pork burgers for dinner tonight.  It was a perfect autumn meal!

    1. If you wanted to make this now, you could bake it in a 350 degree oven, in a foil packet that was placed on a cookie sheet. I think it would take about 25-30 minutes, but you could test to see if it was done at 20 minutes and then keep cooking until it was as soft as you wanted it to be. It would be a great Thanksgiving side dish! If you like raisins, you could put some of those in there, too.

  1. You’re welcome. I actually plan to try it in the oven myself, to use up some more of the Butternut squash I grew in the garden this year. I cut up a bag of it a few days ago, and am storing it in the fridge to make quick meals this week.
